I do dark roasts and 12ish is definitely my preference as well. Some people grind at 13 some at 24. Agreed, but it varies depending on the bean and roast. The water basically fell right through the grounds and totally under-extracted. I've read that grind size varies quite a bit from grinder to grinder. It will not be consistent. And I’ll note that my encore is bone-stock, I have not done anything under the hood. I typically float between 11-14.

That being said I would recommend to do a cupping or a nice French press of the coffee you are trying to dial in for V60 so you have an idea of what it is going to taste like.
